Starting a smallish prime rib

Found this while cleaning out the freezer the other night. Just a simple salt n pepper smoke n eat. We will see how it goes. Going to toss it on the soapstone for a sear once internal is where we want it. Never know until you try.

I'm betting it comes out great. Best Prime Rib I've ever had came off a kamado.

I sort of took a nap and it got overly done. But we still ate the thing.

Then we would make a perfect pair. You can have the pink, but only half the fat, and I'll enjoy the remainder that was properly cooked.

If it's any consoaltion ,that doesn't look "overly done" to me. Or maybe I just prefer a more cooked piece of meat over a slightly raw one
