Temperature on the WSM is controlled by the vents, not the amount of charcoal.

i know, but I would like to know, for example, at a temperature of 230-248 F, how much carbon is consumed in about 10 hours, up or down...Okie Sawbones wrote:Temperature on the WSM is controlled by the vents, not the amount of charcoal.

I have never cooked that low on either my 18.5" or 22.5" I can tell you at 275° to 300° you will go through nearly a full ring in 12 hours.

What k.a.m. said. Around 12 hours at 275 for me. Rarely use mine anymore. But they are good cookers. Have fun experimenting.
