Well, the Maiden Voyage is done and quite the success. The Pork loin came out perfect; moist with a hint of smoke ring. Pulled at 141. We used Kingsford and Pecan and in my opinion, Pecan doesn't throw the same smoke ring that I get with Hickory. Salt & Pepper overnight and then he had bought some Williams Rib Tickler which is ok in my book. The Pit held temp quite well and sealed good on the firebox and smoker doors. I guess the payoff was him telling me twice before I left; " Thanks, it was a great day". About an hour later he sent me a text telling me the same thing again. That's good enough for me. ;)

LOL; HEB has 10 Lb bags of chicken quarters for .37 Lb- He's cooking those this weekend :tup:

Its hard to go wrong with chicken that cheap, he can try his different seasonings and do some experimenting with them.

He didn’t do the chicken; he has a 3 yr old and a 6 month old BUT, he’s pumped: he has a rack of baby backs. I told him how to remove the membrane and then pre season the way I do. They’re wrapped in Saran Wrap right now and he’s going to cook them tomorrow. He wanted me to come down but I told him he could do it: call me if he had questions
