I happen to come across your forum and read it word for word. I have been cooking competition KCBS for a while and I have been using a Cookshack pellet cooker. I have recently sold it because I feel I just couldn't get that smokyness you need in your meat. I just bought a reverse flow wood smoker, but I see, reading your forum that the learning curve is huge, with the fire control. With the pellet cooker I just set the temp's and went to sleep, it was like an oven and it was easy. I did win more then my share in different turn in classes, in the past, but lately the wood cookers have been winning here in Indiana. So I am biting the bullet and giving wood a go. Just wanted to let you all know I have been lurking.

Here's some free advice..pay close attention to the wood you buy.
It needs to be properly seasoned with an internal moisture content of less than (or as close as possible to) 20%.
I like deadfall or wood from trees that died and have stood for several years, it takes YEARS to age living oak.

Welcome, not sure what your budget is, but give BBQ pits by Klose a look. Quality offset smokers they are.
