That’s a beast, like the flags too. I hadnt noticed your leveling jacks before. Are they welded to the trailer? Like that idea.

Pretty even temps across the entire cooking chamber. Loving this smoker!

The front two are welded to the trailer. The back two I just keep inside the firebox and pull them out when I'm ready to cook. Set them under the firebox after the front is leveled and raise them just enough to support the firebox so the trailer doesn't move when stepping on to the back. It's a really nice addition. Picked up a 4 pack off Amazon for about $89.

We did pork ribs and chickens last weekend. This weekend we did a 14 lb prime brisket and lamb shanks. Even though the crazy weather kept me on my toes raining cats and dogs for several hours this morning, the brisket had a great smoke ring and was tender and juicy. Lamb shanks turned out tender and juicy as well.

Made this 18x42 inch griddle for the 3 burner stove I welded to the front of the trailer. Now to clean and season it and we'll be ready to make massive amounts of breakfast tacos.

Looking for input. Going to be planning the single pitch roof soon with a small fold down awning on one side. What size should my posts be? 2x2 square tubing or 2" angle? Bigger? Any feedback would be appreciated. It will go be about 8' tall on one side from the deck and 9' on the other I'm thinking. Is that too tall? All this is new to me. Thanks for the help.

square or round will provide better structural support, the height I could not guess at though.. wait for K.A.M. and see what he says...
