question for you guys: the food grates on my offset smoker are made of expanded metal. when I first got my smoker I cured it with lots of canola oil spray and thought I had done a good job of heating it up to let it set. but my food grates are starting to show rust, and not just a little spotty rust, even though I cover them in oil before every cook. most of the cooking surface is starting to change color and not in the cured metal way. what am I doing wrong? is there something I'm missing? and what do I do to restore/save the cooking surface?

My grates get rusty to sometime. I hit them with wire brush spray a little cooking oil on them and cook. I don't clean grates after cook. Clean Just before cooking. After a while no more rust. CF :D

If you use a weed burner on your grates to clean them chances are you are getting the grate too hot and removing the carbon coating you are trying to keep. This will cause the grates to rust in between cooks.
Back off the weed burner a bit and lightly hit them with it, you just want to loosen up the stuck on particles not char them.

Get the grill nice and hot. Cut a large onion in half and scrub the grill with it. May need a welding glove if its too hot. The grill a lot of chicken quarters untrimmed but make sure you don't inadvertently start a grease fire.
