I want to add one to my collection, but to learn I want an inexpensive one. Any suggestions?

Re: Beginner Offset
Depends on what you call inexpensive <200.00, 3-500, 500-750 <1200.00
I have a Charriller cost <200 I have about 50.00 in materials to mod it so it cooks right.

With that budget Take a look at Old Country Available at Acadmey Sports IMO it is the best value, solid welds thicker steel.
I added a log rack a baffle system to equalize my temps and eliminate the hot spot and flanged the doors.

If you're serious, I have a high quality pit with lots of features in your price range - it might be on the small side of the spectrum but this really isn't a "beginner's pit" from a longevity standpoint - just from a cooking standpoint... that's to say it cooks like a dream and will last a long, long time.
P/M me if you'd like more details.

if you really enjoy making modifications get a Char-Broil American Gourmet Model 700 or similar....less than $200 before modifications...
