Whole Brisket on Vertical Smoker
If your smoker isn't wide enough or deep enough for the brisket how do you cook it. Do you curl up the brisket against the walls or do you cut it? If you cut it do you do it right down the middle?

Lay a 28oz tomato can on the grate and drape the beast over it so it is humped up in the middle. You will be able to remove it mid cook as it shrinks up and it will fit on the grate.
Never met a cow I didn't like with a little salt and pepper.
