That storage compartment on the tongue side of the cooker. Is it big enough to put a 3 bay stainless steel sink into? Along those lines, is there a spot to mount an on-demand hot water heater? Gears are beginning to turn in my brain housing group....could be expensive

I don't believe it would be. It's also not that tall inside. You would have to work kneeling. :D But if you had a dual axle trailer built, Jay could build anything you want :D

OK, got it.
In my state, to sell food to the public whether it's at a comp or a catering gig, you must have a Food License issued by the County. The good folks in my county want to see either a commercial kitchen or commissary privileges.
A 3 station sink will work. Water has to be heated to some specific point that I can't remember of the top of my head but I've checked with the Rani Dealer and those on demand water heaters will do the trick. So then, need a place to mount it on the trailer and I don't have deal with a fixed station commercial kitchen.

What's next...a propane refrigerator?

OK, maybe put the door on the side so there is a solid wall to mount the sinks? Just think out loud.

Is that a gas valve or a water spicket?

It's the drain valve for the water pan
