Steve if your thermometer is a wound bi-metalic type they are like hangin a silk purse on a pig. Invest in a good tru tel 3" or a digital remote probe. I got a digital at wally world for about 15.00 and it works like a champ. Its a no name brand. but it is super accurate.

It aint sexy but it is reliable. If your not reading the temp at the cooking level you could be off (showing cooler) by as much as 25-50º if your thermometer is installed 3-4" above the handle on your pit. The temp will be higher at the food level.
Never met a cow I didn't like with a little salt and pepper.
