One of the local old timers here makes a makeshift pit out of cinder blocks, expanded metal for a grate and a piece of corrugated sheet metal for a roof. Never the exact same configuration each time he makes sets one up but the idea is to have a hot fire in front whence the coals are shoveled to the rear where the pig lies on its side. The piece of metal holds some of the heat is but I think it is more for rain. The profile looks like an "L" with the grate near the X Y axis.
