Tuning plates..???

I'm workin on my first build right now, offset with a vertical smoker on the end. I have seen some talk of tuning plates here and there, just wondering exactly what those were. If any one could shed some light on the advantages I would appreciate it.

Gentlemen i also am on my first build and was wondering on a smoking chamber 20 inch dia by 48 inches long at what height would i place my tuning plates, first cooking grate and the second upper grate, any info is good info to this roookie from Canada eh.
