Commercial Smokers

Hello everyone,

I have recently received some funding to start up my own little BBQ restaurant (looking to seat about 40 people). It would be medium volume. Does anyone have any experience with Commercial Smokers and what I should be looking for in one? There are so many options out there and from what I have read most people like Ole Hickory or Southern Pride. I am just trying to gather as much information as possible before I jump in on the centerpiece of my operation. Thanks in advance!

I had a Ole Hickory SSE and definitely would recommend them but don't have any comparison data.
They are good, reliable pits that take a lot of the burden out of cooking BBQ.
Southern Pride are similar in design but I really know nothing about them.

Hey all, I appreciate the post and help. Im not ready to buy yet and probably a year out from opening but Im gathering as much research as I can to help along the way. Any advice or tips anyone has are always welcome as well. Thank you for the well wishes!

Visit some BBQ joints and make friends. Most are more than willing to show their pits off if they aren’t slammed.

I am in Topeka, KS and that is where I will be opening my restaurant. Like I said, I am still a ways off but I am trying to gather as much info as I can. I like the idea of visiting current restaurants and making friends with the owners to see what they have. Thanks everyone!

I recently purchased a Patterson Pit out of Alvarado, TX (ft worth area) that is going on the back of a bbq concession/vending trailer in a few months.
My pit is 7'-6" long, fully insulated with an auto damper system. I love it, best cooker I have ever used. After my coal bed is built, i dial her in and I can walk off and let her go for hours upon hours without doing a thing.
Mine is a little small for a medium restaurant but he makes every pit custom to your personal liking, he has made them up to 14' long i believe.

Good lookin cooker. What is the propane torch in the drum component? Starting ignition device?

No propane torch or starter, its all real wood fire. The thing on the front of the firebox is an Auto Damper system so it will keep within a roughly 10 degree range level.

I used to live in Santiago Chile where I was a co-owner of a BBQ place. We had a Southern Pride smoker, the SPK-500. We were open for lunch and dinner and this did the job perfectly for us, restaurant held 150 people. It uses real wood and has an auto start torch on it so you need a gas connection, and the giant rotisserie area works like an oven so it maintains temperature very accurately. Now this wont create the same flavor or bark as a traditional smoker, but it does a darn good job.
