Need some help

Postby donyoung » Mon Oct 08, 2018 4:26 pm

Hello
I took a part time job using someone's smoker.
it 6 ft wide by 24" round smoker
Fire box is 22.5"wide, 15.5 deep and 18.25 high
air opening is square 3.5 by 2.5

The opening is half moon opening from fire box to smoker is
20" wide and 7.25" tall

Is the opening to the smoker to big?

There are no tuning plates in the smoker?

Having a hard time keeping the heat towards the lower rack in the smoker, lower rack is around 230 and the top rack is running 300 to 325.

Any help or ideas would be great. Thank you

With this info all I can recommend is to extend the flue down in the cooking chamber to the level of the lower grate.
This will force the heat level down.
