Pit Features

I am looking for a new pit. What features should be included in the pit?
I do competition cooking and some catering and a whole lot of barbecuing at home.

I myself, am tired of stoking fires until all hours of the morning. My next cooker will have pellets (at least thats the plan). :wink:

Looking at your website now, looks like you got that one covered. Tell us what the FECS is not doing for ya. 8)

They work fine. I am also picking up a 700 Oyler. I am saving this for when I get a restaurant. Going to have a bbq trailer built and I will have a custom made smoker with every option and convenience.

Several of the best known BBQ jonts down in Central Texas do it the old fashioned way, on open wood-fired pits. They got my vote for the best que joints. Best ribs I ever eat was cooked that way too. Must be something to it. 8)

But most BBQ joints think cookin that way is too much trouble these days...

I tell you what I LOVE about my pit. The roof system, it has made a huge difference when the weather turns bad. Also I love the gas assist in the firebox, it really helps get everything going.

Those are good. Insulation is a must. Temp control with a Stoker. Built on a trailer. Separate chambers to be able to cook at two different temps, are a few I am incorporating.

What's the price tag on the Oyler? Found their website but no pricing anywhere.

My pit has a vertical on both ends...Left side vertical has 4 trays, RH vert has six....main horizontal is a reverse flow through the LH vertical, FB is located below lh vert... Have a damper between the right hand vertical and the horizontal which allows me the ability to regulate the horiz at one temp and the rh vertical at another....LH vertical always runs a bit higher than the other two due to the FB Location.....I put a roof on mine as well and it has more than paid for itself....Only part insulated is the FB and have no trouble maintaining temperature regardless of the ambient temp.....just add mor stick....
