OK... I have had the smoker going for about 15 minutes now. Probe #1 on the ET-73 is showing 399* and probe #2 is 404*. The lid gauge is at 225*.

Here is a pic of the placement of the gizmo.

I don't have another thermometer that goes that high.

Think these temps are way off or what?

I'm going to remove the probes until the temps settle down a bit.

While the probes are off, why not take a potato or a wood chunk and put one of the probes through that? That way you'll have 1 with the metal holder and 1 w/out.

I was told not use the gizmo at temps above 360 or the probes will melt. My gizmo has a probe holder that sets it about an inch, maybe a little more, above the grate (it clamps on the grate).
