NorCal 320gal "Stick Burner"

In the tuning phase now, could use some help with the deflector plate and tuning plates,etc. .
1.How far away from meat is the ideal distance to the tuning plates ?
2.Firebox is too small,( it's an old fireplace insert a pick up for 100 bucks )can I make it up with a taller stack ?
3.SB is insulated with fire bricks should I take them out for more volume in my firebox ?
4.It heat pretty good it's up to 85 on the firebox in 240 on the stack even without anything mods yet.

I prefer 6" between my plates and the top of my grates.

Taller exhausts sometimes lead to stalled smoked creating stale smoke in the chamber. If you are using 6" x 6"
square tubing your exhaust need only be 25" tall if you followed the pit calculator with your fb to cc opening. If you used 6"
round pipe you only need 31"

I would remove the firebrick.
