My plan is to start with the large/er gaps at the right and go smaller as they go across.
Any suggestion as to how big a first gap and how small a last gap, and should they go all the way to the chimney end?
I know, too many questions and I don't mind experimenting but the butcher is starting to remember my name AND my credit card number!

Looking at the first pic of your plates is how I would proceed but turn the gaps around starting narrower at the firebox. The spacing looks about right to me but you have the gaps backwards.
Leg quarters are a good practice meat over beef or pork. Also if you just want to play with the fire use pans of water on your grates they make mass like meat and will create the flow blockage like a brisket or butt.

I do need and want to play with the fire, but I think I'm going to pick up a walmart cheapo brisket..I think they are around $2 a lb for the lowest quality..
Probably what the local BBQ joints use anyway.

Someone once suggested using canned biscuits, spacing them around your pit...will show you where the hot spots are. And like Kam said....the smaller gaps closer to the firebox

I likes me some biscuits but this is my "test" media..hope it tastes good because it is way cheaper than Costco prime brisket (and they are pretty darn cheap).
