Nice Looking Smoker, I'll bet you are ready to see some smoke coming out that stack.

Re: Plans for building an offset backyard smoker
I feel like I should be in a SA - smokers anonymous- class. It's been 5 weeks since I've smoked. Now I'm trying to figure out what to smoke first.

Re: Plans for building an offset backyard smoker
Just might have to go with that one. Sounds great at 635 pst.
These are the last two item to place on the smoker. It represents where I work and those that came before me that have since retired. I learned a lot from those men and they allowed me to work along side them for years. Great men indeed

Re: Plans for building an offset backyard smoker
Well first seasoning is in the books, thank to everyone here for your help. My smoker has a 50* drop from right to left, even heat to boot.

Re: Plans for building an offset backyard smoker
It's been two years of abuse to this smoker and now I need to fix a few things I feel will make it easier, safer and better to use. I have always felt like the vent was too small for mine and copied a previous Yoder owners idea for my vent improvement. See pic below. I plan on attaching two handles for the fire pit side. 1 for the vent and the other for the handle to open up the box. The next item is to try and see if I can close the lid more on the bbq side. I was never happy with the gap on the bottom of the smoker. I have more smoke come out from there that I care for. The next step is to clean out the bbq and will be asking that if I can't find out a good solution/process to follow. The last item to do is clean, prep and paint the smoker again. I need to add another paint layer the first time but didn't. Now is the time to finish the job.

Testing the vent change now and I can attest that it flows better than before. Happy this far

Re: Plans for building an offset backyard smoker
It seemed faster to get the meat up to temp before I wrap it. Then I remembered that this was a 5 pounder while my last one was bigger. I like the color for sure

Me too. Made an apple butter bbq sauce for those that need it. Three more hours I think to go.
