Well darn. Next delima... will the weight of a full packer brisket be okay to hang from a grate or should I weld in a rod to hang it from?

Not my briskets because I cook them too tender. My suggestion is to hang it till it reaches about 165° internal then pan it with a cup of beef broth tent it and finish it off in the oven.

When I was borrowing the Lang that's how I did my last one. I'll eventually have this 250g trailer smoker built and won't have to worry about it as much.
