Question for those with trailer mounted pits

What feature do you pine for that your pit doesn't have? Things like extra storage, lighting or anything else you regret not getting or would like to add.

What I wish mine had is a water tight storage bin, a sink, and some kind of water storeage device.

I'm working on some kind of storage area behing the 2 burners on the front of the trailer. Its just going to have to be, metal due to the burners.

Last hoop to hop through, or at least I hope. The good folks at Public Health have informed me that heating beans in the smoker is a no go cause it won't heat the beans fast enough. Yeah, so what about the meat right? They're ok about smoking the meat cause they "understand the business model".

They are pretty insistent that anything that burns propane to heat beans or fry hush puppies be NSF certified?

The Bayou propane burners are less than a C note, but aren't NSF certified. The "hot plates" (2 burner propane gadgets with a NSF tag) I've found on line are any where from $800 to insanity.

Looking for a solution here. Any ideas or suggestions.

Thanks :D , must have missed that one. The prices on NSF rated stuff is all over the board. One place will have something for $700, next place has what appears to the samething only wants $1,100 for. It really pays to be careful and shop around.

In this case Acemart wants $395 but free shipping, the webstaurantstore wants $309 plus $41 shipping.
