What is the best "set it and forget it" pit?

What is the best set it and forget it pit, that is not a pellet smoker? Looking to get a patio pit, but always find my self doing a bunch of things while trying to smoke my vittles and the temp fluctuates a lot. I have a huge RF stick burner right now. I know there is a lot of debate out there, just wanting some insight from the peeps that do it every day. Thanks for the info.

If you're not cooking a ton of volume, go get you a ceramic and never need another backyard grill again. Mine's been used as an oven, a grill, a smoker. I can cook on my Primo for over 20 hours without even going back out and looking at it, and still be within 15-20 degrees of where I started. I wouldn't give up my Primo Oval XL if it was demanded in an armed robbery :mrgreen:

Ceramics and insulated cabinet smokers will probably be your best bet. I have an Akorn that works great and i have a pitmaster safe that is an amazing cabinet smoker.

I love my Primo Oval XL, and I am going to buy an insulated upright when I get to Texas, probably a Backwoods G2 Party. Add in a DigiQDX2 and you're all set.

Cant believe nobody suggested a weber smoky mountain cooker. The original set it and fergit it cooker. Put one of those fan controller thingys on it and you is good to go.

The secret to set it and ferget it is to get the Hired Chef Attachment.
Takes extra beer to power one though.

Pit Barrel Cooker is about as close as you can get to set it and forget it.

I cooked 11.5 and 9.5 pound pork butts in just over 9 hours, without wrapping....

I like bark, so my briskets take about 8 hours.

Back ribs 2.5 hours, St. Louis 3 hours..

All with a running a pit temp of about 275....efficient as all get out.....

On a UDS cooker, is wood used at all, or is it just charcoal? Just curious about the smokey flavor and smoke ring from wood. Never used one before, but it looks it may be a wiener, I mean winner.

I put 3-5 Man Fist sized chunks mixed in my Lump or I stand 1 3X8 piece of Mesquite in the middle and pack the lump around it.
Never met a cow I didn't like with a little salt and pepper.

Agree with that or a Pitmaker safe if you want a smaller cooker.

Don't hate!! This thing works awesome. The "true" set it and forget it smoker. I will be buying one soon for those days I don't want to deal with my pit, which is an all day affair.
