Thanks to all for the tips.. papa tom, i live in Covington, La. and i have a 2lb point brisket that i am working on.. with only my fiancee and me, we dont need a 14lb brisket.. I am really interested in a 16 gallon cooker like the one Jim (ODS) has, but I am physically unable to build one.. He has the blueprints on his site, but I need for someone to help me out, if possible.. any other help to get away from this hunk o junko would be Very appreciated.. will put pics up when its done.....

I smoked it for an hour, took it inside, injected it with a half and half of worchestershire and soy sauce, rewrapped her, and put her back on the grill.. and the plan is to give it and hour or so then take an inside temp and keep cooking till it gets to about 180 degrees.. then I'll double wrap it, put it in the oven (just to put it out of the way), and get the rest of the meal together..

OK Reb good luck. Just FYI I wrap at 160° and don't normally inject.

maybe look for a brinkmann upright on CL. especially if you seem more inclined to having a upright and are not ready to go for a wsm. at least with that, you would have a far better chance of not becoming frustrated and resorting to the flamage in a bottle.
otherwise i must agree that putting some holes so that air will flow to the brickets is the way to go. be sure to understand that what you are smoking with was not intended for that. i know that it can be done, but there will be issues to deal with.

ok i just searchtempest craigslist in your area, and did not see anything remotely resmbling a smoker. that leaves another option. turn something you already have into one. i know you said that you were physically challenge. but maybe you might get a friend or three to do the manual work while you provide the instructions. of course it would most likely require that you end up cooking for them guys.
