I am an IBCA judge so I may not be much help. I read their rules and it appears their quantities and possibly type of entry change from one event to the next and the promoter and or the head judge sets the criteria. My advice is contact the head judge as that is the person who will be either accepting your box or turning it away.
On the chicken if allowed I would do one half and supply both thigh and breast meat as samples.

One show piece and 20 bite size samples. Check with the head judge, We used to cook boneless chicken thighs and cut those up with some good sauce to go along with the show piece.
How bout some more beans Mr.Taggert? I'd say you've had enough!
