I don't do competitions but like watching them on tv shows.
I have a question about ribs.
Why when I watch the shows the slabs are always or appear to always be a perfect rectangle?

The ribs are trimmed to St. Louis cut. The chine bone and tips are removed for this.

Trimmed with a saw? I have only ever bought baby back ribs? I think I need to be schooled

Dang, good video but he *couldn't* have been a Cub Scout - I don't see how he has any fingers left the way he uses that knife He's in his own blood circle
