KCBS Chicken: Can I get a ruling?

Because I know a few of you guys out there do KCBS I have a question. Yoda and I are going out to do the Royal on Labor Day weekend, and the question is about chicken thighs. We have been looking at those websites with all the crazy turn in box pictures with judges comments trying to get a fix on how the thighs should look. We get that symmetry and common sizing is an important feature. In some cases I see where some boxes were scored down for thigh bones that protruded out more than others. Our thought was, well geez, we'll just clip the ends of the bones off so they are really not visible.

Is this permitted, or is it considered some form of the dreaded "sculpting" that I understand is prohibited?

I trim the knuckles off the bones with a really sharp cleaver. Just make sure you don't end up with any bone fragments stuck in the meat, if you get too rough with it. Just rest the cleaver on the knuckle, then smack the top edge of it with your palm.

Turkey shears (poultry shears) work great for deknuckling the thighs. This is mainly what I see as a judge, though I will see legs occasionally, and rarely do I see sliced breasts.

Carole and I are judging the open and sides at the Royal.
