Brisket wrap?

Postby OutlawNinja » Sun Jul 31, 2016 11:15 am

Does everyone wrap their brisket? And do you add any type of juice? Experimenting with my competition style and last night I put in a foil pan with pineapple juice about half way thru.. Not sure if I liked it.. Thoughts?

I pan all my briskets after they reach 165° to 170° and foil cover to finish. If I ever add liquid it is 1 cup of beef broth and that is usually reserved for select briskets only.
Always remember slow and steady wins the race.
