Need an opinion
I posted this on another Texas forum. We are a husband and wife team that cooks Texas comps. We made it to the World Food Championships this year. The judges are KCBS. I have made burnt ends and they are pretty good in my opinion. They are definitely not in our wheel house. I value this forum's opinion. Would you turn them in or dance with just the flat slices that brung you ?

Always go all in on a sure thing, go with the slices. If I was to throw reckless abandon to the wind I'd just do cubes of the point to highlight its goodness and let it stand on it's own, why hide it under goop. I always figure sauce served on fresh bbq is to cover up an oops.

Like Thom said, if they're really good, put them in. If not, leave them out. If the slices are off the chain, and the burnt ends are so-so, they'll only remember the burnt ends when they write down the score.

Thanks for the replies. Thanks Blu...your opinion although never having entered a contest is valuable. Having my tail handed to me in the Royal...Although we won our brisket table really makes me wonder.

Most of the the judges were west coast CBJs

I couldnt agree more. Only put in that box what will benefit you... if there are any questions leave them out. I know everyone likes to preach burnt ends in KCBS formats but it's not a necessity. We took 3rd place brisket in our first KCBS compt last year leaving those jokers out. I just couldnt convince myself to do what I wasnt accustomed to.
