40 bite size chicken pieces

So I am cooking a cook off this weekend and you have to turn in One half chicken as well as 40 bite size pieces. I have never done anything like that. Do you just cook chicken pieces such as breasts and thighs and slice them or do you just cut up your some chuncks out of the other halves? I thought about cooking a bunch of lil drummies to put around the half chicken? anyone have an idea?
