Re: Beginner on beans
Dutch oven on top of my firebox. Finely dice anything you put in the pot, nothing larger than the beans. Build my flavors at the very end in a 3 dump process. Keep in mind, I think my beans are amazing...but I've never walked

Re: Beginner on beans
My wife makes the beans. I love them but hardly place. I don't care much. I just like to eat them. She cooks them on the stove in the camper. I have seen most people cook them on a propane burner outside. Dutch ovens and pressure cookers are a good option too.

Re: Beginner on beans
Keep beans really, really, really simple for comps.
I cook mine on a coleman stove.
I cook 1 lb of beans, no soaking, or anything like that.
Start about 3.5 hours before turn in, dump in a box of chicken broth and a lb of casserole beans. I use salt pork (unsliced, cut into 4 hunks) and frozen onions. I only have the beans, broth, water, onion, and salt pork in the pot until the beans are done. I remove the pork and add my spices (3 total).
I generally am good for a bean walk.

Re: Beginner on beans
Crockpot, beans, chicken stock, onion garlic bell pepper, hock, fiesta brand bean seasoning. I've never done well in beans.

Re: Beginner on beans
Ceaves is dead on simple simple simple. Salt and pepper basically or what ever your grandma uses. Think about what you get at most restuarants, plain simple beans, that is what folks want.

Re: Beginner on beans
Pressure cooker
1# of casserole pintos straight out the bag no rinsing
3 beef buillion cubes
3 chicken buillion cubes
1/4 cup fiesta brand pinto seasoning
1 whole bush of cilantro, leaves picked off the stems
1/2 medium sweet onyawn fine dice
1 ham hock
7 cups of water
Cook 1.5 hrs and turn off burner
Rest 30 min
Adjust saltiness 5 min before turn in with lawrys season salt
Go collect trophies
Just simple charro beans
We have two 1st in pinto beans this year and a few last year
This is our exact recipe, simple and tastes great. I advise you to go a little saltier than you would like to eat normally. What I have learned at cookoffs, then you think it's salty enough, add more salt.

Re: Beginner on beans
I hear that bbq beans or sweet beans with brown sugar are doing well. I do mine more of a traditional Mexican style and done well or at least I used too. like I said before from what I hear from a few judges are that the sweet style beans are hitting.
I'm not changing what I do, just saying what I heard.
