competition pits

Postby smoking gents » Sun May 04, 2014 6:46 pm

How many pits do you carry to a cook-off? If you do own a competition pit on wheels, do you cook your brisket, ribs and chicken at once? Which ones do you bring? Just trying to get some insight and learn.

I use 2 drum smokers, ribs and brisket or one and chicken on the other( cook at 350 for chicken)
A lot of the guys with trailer pits also cook their chicken on a 2nd cooker!!

Used to cook on one ... went to 2 when I started carrying my egg... then went back to one when I decided it was too much of a pain to load and unload. All a matter of preference and knowing how it/ they cook.

Chicken is not your friend low and slow. Good comp chicken needs to be cooked hotter and in under 2 hrs to maintain juiciness

Ok J$ I have 2 questions for you on the pit...
A) Whats with the roll cage looking bars?... I'm sure they serve a purpose just never seen it before.
B) You giving out free eye tests at these cookoffs with that eye chart?

Brisket and ribs on Bahama Mama. Chicken on grill, Debbie cooks her beans on the burners.
Pretty much a kitchen on wheels.

I do mine all in Rosebud, but adding at different times, different parts of the cooker. Manageable, but not as easy to control as multiple cookers. If I had a big rig, with do it like the Doc and others do.

Gettin' time to build me a bigger rig.

Nice rig, Doc Smoke.

i haven't done an actual comp yet so take it for what its worth to ya BUT all the practice cooks i've done at home with cook times and what not i will do all mine on my offset cooker. only thing i may branch out on is cooking my ribs in my vertical Safe. but i cook everything at the same temp and since my offset cooks even all i have to manage is when to put each category on and when to take em off.
