I have my cook times down with just a brisket or two, but does it change with a lot of meat? Trying to figure out if I need to add more time for around 25-30lbs of meat total on the smoker.

Redneck could cook 30 briskets and have no problems with his custom R&O Smoker pit!!!

Can a R&O offset really cook 30 Briskets?

If you stack them, yes, I've done stacks of three on my old offset but it does take more time with that many and you have to rotate them to balance the heat on each and try and get them done about the same time.

My R&O will hold about 10 packers comfortably.....but we also have a Southern Pride Model 510 that will hold 40 briskets... :laughing7: :laughing7:

My buddy manages a bbq restaurant in Chappell hill and they have 2 southern prides that can hold 60 Briskets each which is nice, but to me it's nowhere close to the flavor you can get burning a clean oak fire with 1/3 pecan on a offset. I can get close to that flavor in my vault which cooks 10 packers comfortably also but it's still not the same.
