What is this Tender Quick yall speak of. Cheater smoke ring maker? I think if you trim the fat off the brisket and the ring will go all the way around. Especially if you use a water smoker.
That is some nice looking brisket either way....good job.

Tender Quick is a Morton Salt Company product similar to Cure #1 (pink cure) except it is pre-mixed with salt. It is not as powerful -You need more of it per pound to cure meat. For more info on curing salts ping Papa Tom, our in house expert on all things cured.

[quote="Chef Mike's BBQ"] I think if you trim the fat off the brisket and the ring will go all the way around. This is not correct....you need some fat cap to protect the lean meat from the length of heat on it.....and for added flavor...Ive never seen a RING go all the way around the brisket without TQ or some other enhancer??/. Especially if you use a water smoker........Even less smoke ring with a water (vertiucal) smoker compared to an Off set....
R&O Custom Offset....It rocks!!!!
