Any one ever tried doing beef ribs for the open? I'm considering it. Not sure about everyone else, but it seems like only jalapeno entries have been making the top three around here. Hoping to throw something simple at the judges and win them over with the KISS method.

Swamp Donkeyz BBQ, seasoned with just Kosher salt & coarse black pepper and you would have my vote for sure. :D Just be sure they are meaty enough and tender you know the whole cheap knife and fork routine.

Never thought about beef ribs...good idea. Probably should have kept that idea quiet.

I've never done the open category but I've heard a lot of people get creative and do something a little "fancy". Seafood does well I've heard.

I've seen some fancy seafood in the opens. That's why I'm thinking about getting back to basic BBQ for the open category.

The only negative would be a longer cook on Friday to be able to get those beefers nice and tender. Seafood is pretty short and sweet. Lots' of stuffed pork loins and tenderloins down here. Fajitas? Maybe a beef, chicken and seafood mixed fajita turn in?

I will say that from what I have seen, "complex" turn in's do well. By that I mean those to who take the time to throw in sides, sauces and what not. (usually they allow these things)

Bacon wrapped shrimp took four of the top ten spots at my last comp. I did something special and unique (BBQ Gator Sushi Rolls) and took twelve. I wondered if I had used shrimp if I would have finished higher. They asked for twenty portions. I don't understand why that many, but that was what was asked. This was for a TGCBA comp.

TGCBA usually asks for more portions
In case of a run off. Around our area usually anything with bacon and jalapeño does well. A guy finished fairly high with a New York Strip and grilled shrimp.

buy beef short ribs instead and you'll have plenty of room in the box. Short ribs will have a nice amount of beef and not take up space.
