Hot / cold

Doing my 1st Cookoff this weekend and the gentleman I buy my seasoning from says you need to cook your meat to a flavor when it's cold since it is cold when a judge gets it . He said hot and warm meat has a different flavor than cold . Haven't ever really noticed my self !

Right, your food you should still taste good when cold or at least room temperature. Depending on number of entries, it could be nearly 45 minutes or more before the last judge samples it.
