Just curious Jtilk, how they turned out, I know this is an old thread and maybe you posted your impressions already?

They turned out pretty good... nothing to complain about, but I can say I've cooked some that weren't prime that I thought turned out just as well. About a week ago I cooked just a typical select on the egg, injected and rubbed to let it set overnight and had several people try it who have tried some of mine in the past say it was hands down the best one I've ever done for them.

Check with a Local butcher, always a good place to start
