I am going to enter my first comp, they are asking for 20 bite size pieces of Brisket, Chicken and ribs? Also they want 2 ribs, 3 slices of brisket, and one half of chicken, along with the bites. Any advice on the bites? Thanks

good luck. Sounds like a CTBA cook off. Ive heard they are a little strange

Yup this has CTBA written all over it. On the ribs we normally cut them in half getting two bites out of each rib. Brisket just cut each slice in half or thirds and then put them in the box in a neat eye catching manner. Chicken???? We've done it all, sliced breast, boneless thighs sliced into thirds, a mix of both....it just comes down to preference. Thanks, thought it sounded strange. How do you cut the ribs in half? I will let you know how it turns out.

Use pruning sheers like you would use to trim small branches. You can get them at home depot or lowes. Just wash the blades as sometimes they are a little oily out of the package. You can use a knife, but you'll have to make sure it is sharp as any back and forth cutting will shred the meat around that area.

Where will you be cooking? I just got two entry forms in the mail today, one in Salado and one in Lott! May try to make the one in Salado!

PVC pipe cutters is what I use to split the ribs
at those "wonderful" CTBQA events. Just don't
forget your "show piece" (whole rib/slice of
Brisket/piece of chicken) when you turn in.
