Trimmed Brisket

OK at the next contest I am going to try a trimmed flat for the first time. What size should I look for? It is my first time to but just a flat.

I would think somewhere between 5-7 lbs would be good. I wouldn't go too much below 5lbs though.

I try to find flats in the 8lb range

For comps I look for size and thickness and marbling and dont worry about weight, trim both sides to square up about 9-10 inches wide to fit nicely in the tray.
