After the brisket is off the smoker: I've tried foil, plastic wrap, and paper never done a combination method.

There are theoretical and practical advantages of these three products.
Foil--quickest and insulates the best
Plastic wrap--seals the best, but is cumbersome--sticks to itself, etc.
Paper--messy, but steams the meat less than foil

Or you can rest it open in a cooler or Cambro. It does the same thing.

I rest mine on the couch. Problem is its in my belly so I gotta lay down on the couch so it can rest

Pull it off the pit... let it vent for 10-15 mins in a aluminum pan... foil and throw it in the cooler for a few hrs.

That's what we do! At least 2 hours in the cambro.
