Barbecue sauce question

I’m new here so bare with me on a question I have about competition rules, it seems that Texas sanction cook-offs don’t allow sauce on the side of the turn-in boxes but I was watching the Pitmaster Shows on labor day and they had sauce in all the turn-in boxes. Can someone explain about this sauce issue, is it a Texas rule only or is it all over USA except for the TV shows?

Texas events allow you to sauce, but one your meat is in the turn in box your done. They prefer any sauce to
be cooked on the product. KCBS is a different beast.

Yes different sanctioning bodies, different rules. Most Texans allow sauce but not once it is in the tray and it cannot be puddled in the tray either.

my only guess is if you have a judge who recognizes a competitor favor in the sauce, his vote could vary good or bad. Well, what do I know, I never been in a cook off. The rules read:

"Meats may be cooked with sauces and/or other liquids, but once the cooking is complete, sauces
and/or liquids may not be added once put into tray. NO PUDDLING IN BOTTOM OF TRAY."

I have judged and all I can say is if you can tell what sauce they are using you have one great pallet. Most use some sort of commercial sauce and I bet at any contest you have multiple teams using the same sauce.

It simple...Put the sauce on for ur glaze..ie ribs and chicken...for pork if ur pulling it..pull then toss with the sauce..good pork onced sauced doesnt even look like it has any sauce on it..and this is kcbs style events im talking about..as for the no sauce question..in kcbs i was taught that any pooling of sauce is bad..mainly cause they dont want u to be able to mark ur box in anyway,and the other reason they dont let u have say bbq sauce in little cups from teams is they dont want the judges eating someone elses bbq with someone elses sauce..i have judged only 1 event and i agree with fatash..if u can tell by the sauce ur pallett is awsome..alot of teams use comercial sauces mixed together..and some use their own formulas..i make my own sauces simply cause i like to..and i have had good responses and results from people so that a plus...lol...if this Diatribe has helped awsome..if not then im sorry...lol..im still learning myself... :geek:

I make my own sauce also and I'm sure all the top constant competition winners make there own. If you taste mine you could pick it out of many because of its unique hot/sweet favor, five different kind of hot peppers in 7 cups of sauce. My family and friends sure come around with their baby jars to fill up and maybe they come cause it free.
