Need tips for brisket

Need help with brisket very weak at it have a comp did weekend i drew brisket and ribs for our team.
1. i usually marinate in dr pepper and salt
2. what kind of seasoning after i dry it from marinating
3 usuallly cook at 220-240 12 pound brisket no trim (smoke it)
4. any tips will help

That would be correct sir. I dont necessarily use this exact recipe in competitions, but I have given it a shot and it's very good.

I see you got the secret recipe I normally use Necafe Clasico instant

This Rub works Real good too.
*Coffee rub
2 cups light brown sugar
1 cup chili powder
1/4 cup paprika
1/4 cup kosher salt
1/2 cup medium ground black pepper
1/4 cup finely ground dark roast coffee
Never met a cow I didn't like with a little salt and pepper.

ok so since coffee has resurfaced, has anyone experimented with coffees from other countries? like say a German coffee or Hawaiian? things like that.

Well to answer your question I actually haven't... I've heard of people rubbing steaks down with ground coffee as well, but I'm just cant bring myself to risk putting coffee ground on such a good slab of meat. Sounds risky... haha

Ralph go to the HEB on north tenth and buy the Salt Lick original, very very good on brisket right off the shelf if you dont want to mess with mixing.Also if your competing in Elsa this week or Mercedes in a couple order some Butchers, really helps overall flavor inside the brisket, judges love it.
