Don't wrap unless you are going for steamed skin....cook hot and fast, light on the sauce and only at the end of the burn.

We ended up scraping/wrapping and then not saucing and got 19th in chicken. The packs of chicken that we got were pretty rough, so finding 6 identical pieces was more difficult than I thought it would be. I was happy with 19th in my first comp for what I thought was our weak point.

I'm in DFW and it was at the Bedford Blues Fest. It was a KCBS comp.
