MSG for comps

Postby GeekSmoke » Wed Aug 24, 2011 5:09 pm

Ok. Here we go, and I apologize ahead of time for any arguments that come from this thread.

Has anyone tried incorporating MSG powder into their homemade competition rubs, sauces, or injections?

Yes I made that mistake. I added MSG to my rib concoction that I liked a lot and did it at a comp without testing . Guess what MSG enhances the salt flavor a lot and my ribs almost earned DAL.... :banghead:

MSG for comps

Postby atcNick » Wed Aug 24, 2011 6:42 pm

ButchersBBQ just sent me a sample of their injection/marinade. I haven't had a chance to use it yet but I think it has msg in it. I read about it on various forums and most reviews are positive.

I read that if its not 99% pure MSG the FDA does not make the company list it in the ingredients, so there may be more products with it than we think. With all the processed and artificial flavors in our food, I am not to worried about it.

Its in just about everything out there, (like corn syrup and gluten) last I read they even give it other names. I dont like it personally but its in most rubs out there now. Would never use it at home for my family.

If ol' Charlie Goodnight was cooking a brisket on his ranch in the floor of Palo Duro Canyon in 1880, he wouldn't be yanking a shaker of MSG out of the pocket on his batwing chaps to use on the meat. I'll stand with Charlie and pass on the MSG. Not a condemnation of anyone else, just where I stand on the subject. Same goes for yankin out a syringe...again, not condemning anyone else and I know I might not win a comp without it, but I just can't talk myself into that...would be sorta like finding out Babe Ruth juiced up his arms like Barry Bonds.

Personal reminder to go re-re-check my rubs once again to make sure there's none in there, to make sure I am not talking through my hat on the blog.

not a fan of msg but then i don't care for BBQ candy either. but in this neck of the woods, both win consistently. that being said, i guess there isn't a Jack future for me here.

six months till i'm home for good!

I agree with both sides of this argument. If the rules by the sanctioning bodies ruled out certain ingredients, and they had a way to test (brisket steroid sample? :laughing7: ), I would be all for it. Until then, I say go with what is winning in the comps and doesnt break the rules.
