Which WSM

Postby RangerJ » Thu Jul 21, 2011 10:43 am

Going with a Backwoods Party and a WSM for my new line up. The question is - Which WSM?

All smokers / tables and coolers will be packed in my Tundra. I have the 22" which was just delivered and I guess I never paid attention to how large they were. As big as my 2 UDS's.

I'm considering sending it back and purchasing the 18.5".

Thoughts?

Wes, I think for your space requirements and your usage the 18.5 would be perfect.....IMHO..

I have an 18.5 and it works awesome and I would recommend it to anyone asking, however, I do find myself wishing I had a 22 inch on occasion when I'm doing ribs. If you have a backwoods as well though I don't see why you wouldn't be fine with an 18.5. It will handle chicken and pretty good sized briskets.

Ribs and brisket on the Party and chicken on the 18.5 WSM. Great combination
I have a 22 also and it's a fuel hog!

I've asked this once before and think I know the answer. The spares have to be trimmed, to fit in the Party correct? And I cook St. Louis style BTW.

St Louis cuts will fit in the Party if you put them in at an angle - even after they are wrapped.
Also, I use an empty foiled water pan in the WSM for chicken. Helps to control the fire a bit but you can still get get it good and hot (350+) if you want to.

Everytime I do ribs on my 18.5 I'm always wishing I had an extra inch or two.
