Redneck what re 1845's?
They are à Hormel st louis cut, style number 1845, They are hard to find in north tex, but down south there are stores named super s, that carry them, i think the HEB' s carrés them . I bought some in Austin sévèral times

I use HEB they are not enhanced.
Never met a cow I didn't like with a little salt and pepper.

I usually go with HEB myself, although I'm not a stickler for the brand. I try to find St. Louis ribs when possible and look for good marblization.

I have also done well with Sams ribs. I have been using Excel for a while now and have done well at comps

Used to use Sams exclusively for years but this years they have just been more junk than ribs at my Sams, lots of flap,fajita and breast back bone? Not going to buiy those any more.

the only negative I have about IBP ribs from Sams is they come 3 racks to a pack.... .....I only need 2 racks....
