Spice Question

Postby BigLamb » Mon May 09, 2011 9:23 am

Is spicy bad when it comes to competition? I make my own rubs but they tend to lean to the more sweet and finish off with a spicy end. I am just wondering if it depends of the competition the taste buds of the judges. Any feedback is appreciated.

Thanks

This is thread discussing that very question with ribs as the focus. Hope it helps.

I like the sweet with a little kick at the end myself.

Thanks, thats what I was looking for. Basically its a gamble which is what I figured and depends on the palate of the judges. Good enough for me

Its gonna vary with every cookoff... I recently won back to back 1st palce ribs in 2 cookoffs with the sweet and spicy approach, went to one last wkend and got 10th out of 34 teams changing nothing. Go figure...
