Another Bean question

This is kind of an off the wall question about pinto beans at a comp. I have been told that judges dont like split or busted beans in the cup. If thats the case, do you take out any broken beans out when you sift through for rocks? I'm trying out my beans for the comp this weekend.

When filling the cup is usally when I sort out any splits or skins.

Mine bust when cooked on too high heat....

The judges are just general public. I dont think it matters.

Don't seem to matter. I always got split beans.... pieces & parts cuz I smash up a bunch of em to thicken the juice. Well at least in my extensive bean competition experience (2 cooks) it ain't mattered. :)

I agree. Yes the split beans may not matter too much but in best case scenario all other things being equal the cup of beans that "looks" prettier and tastes the same will score better imo. Presentation is still part of the equation. I always try to clean out the uglys before cooking and soak at least an hour so they dont crack by absorbing water too quick under heat. Try to imagine a frozen glass coming out of the freezer into some hot water, same pricipal.

Thanks guys, Still trying to figure the bean thing out. I made some and I thought they were prety god but my wife said they were too spicy. Go figure. It was just a spice on the very end, after you swallowed them. Guess I'll have to keep trying....
