Have any of you used these in competition?
I ordered some from an online meat store and didn't realize "extra tender" means they've added some phosphates, etc already. I have a couple of competitions coming up over the next 3 weeks and am not sure if I should use these or go back to the HEB all-naturals.

I've cooked a few racks.. some were hammy tasting, some were not. YMMV type of thing?

Thank you - so if using for competition they aren't injecting them? I planned to inject my next set of home-cooked ribs to see if it seemed worth the time for competition.

I cooked them, not in competition but at home and was not crazy about them.

Re: Smithfield Extra Tender Ribs and Competition
I started using them in competition and really like them for comps. Since switching, I've placed 4th, 1st, 19th (won my table, though, in KCBS) and 2nd. That's over a span of about 1.5 years because I only do 2-3 comps/year. I also like the price tag - I've gotten a decent ROI.

Re: Smithfield Extra Tender Ribs and Competition
Nice, have you injected them? I didn't this past weekend, not wanting to introduce yet another flavor/mix to the mix... with my placement I could have experimented a bit more tho
Idda know... injecting seems to be taking a weird turn - turn in boxes are looking more and more like synthol competitions.

I don't inject ribs. I know some do, but I don't think it's necessary.

Injecting ribs is getting common, what you inject them with can vary quite a bit.

Re: Smithfield Extra Tender Ribs and Competition
I cooked them this past weekend at the Deep East Texas BBQ cookoff - flavor and tenderness was amazing, but the bones were a little short and kinda crooked. For the life of me I couldn't slice one rack straight. Plenty of good meat but with the short bones, unless I'm turning in little bites I had to leave more of the cartilage than I normally would.
I'm going back with my old ones for the next cookoff
