Sautéed Reindeer Sauce - Poronkäristys

Postby Huppe » Sat Jan 09, 2010 12:53 pm

This is a recipe I got from "Sterno". In Finland this is very traditional food and we are proud of it. It was christmas and I got a chance to get some leftovers from Santa Claus. He had some reindeer he didn't need anymore ;)

So I had nice chunks of reindeer. I had it about 4 pounds. We started by having finnish beer from Lapland:

Meat was frozen and I made THIN slices from it with sharp knife:
Image

Slices were very thin:
Image

On the meantime while it was a though job we had finnish Jallu:

I'm working:

When everything was sliced we put some butter on the pan:

And meat on the pan:

Let's serve some beer to the reindeer:
Image

Ok, let it be for a while on a medium heat:
Image
I added some black peppers, bay leaf and sea salt and onion powder.

Meanwhile, we went out to play 'cause it was nice weather (-8F):

My father-in-law was happy and played with us:

Weather was really nice:

My appletree use for smoking:

Ok, it was time to check out the stew:

Looks delicious!

After 3 hours it was time to make smashed potatoes:
Image

And we served the dish with bread from Lapland:

And with lingonberry jam:

Dinner is served:

Please enjoy:

Almost done:

Beer from Lapland:

Did you know that Santa Claus is from Lapland, Finland?

My son helped me with the oven:

Huppe Thanks for the pic's. Looks very cold there but beautiful as well. I have had Reindeer steaks while in Norway and Sweden, tasty stuff. I sure would like one of those Beers. That dish looks good as well I think I might try it with some venison, the next time I get some. The Hunting Gods where angry with me this year, .The next time you talk to Sterno tell him to check in we miss him around here.

No it's not. I guess you can get lingonberry jam from Ikea if it is not available in grocery stores?

Ok I know he's been quite busy for one reason and it is not so nice weather to do his favorite hobby now in Germany. I mean smoking ;)
I'm sure he'll come back soon.

Thanks for comments. I'm glad you like this :D
