Blackeyed Peas three ways and cabbage two ways :D

Lucky Bean Dip:
Blackeyed peas, black beans, corn, red onion, cilantro, feta cheese, and roasted red pepper sauce. HEB was giving samples of this away yesterday and I had to get all the ingredients - it's real good.

Cabbage enchiladas:
Cabbage, blackeyed peas, Mojo Pulled Pork, onions, lime juice, cilantro, cheese, sour cream to top

Cooked the leaves so they could be rolled

Stuffing went into a pan to mix and warm up

Stuffing on to the cabbage and rolled

Into the bottom of my Christmas present from my traveling companion :D 71/2 quart Le Creuset Dutch oven :D I must have been a good boy :D

Covered with enchilada sauce and cheese - ready to heat up

I like black-eyed peas and those do look tasty. 8)

We did the same, well not the same dish but the peas and cabbage thing. I still say, looks to me like we gonna need all the luck we can get. CF :D
